The chemical name of Glutathione is N-(n-l-man-glutamyl - l-cysteyl) glycine. The molecular formula is C10H17N3O6S, the molecular weight is 307.33, the melting point is 189-193 ℃ (decomposition), the crystal is colorless, transparent and slender columnar, the isoelectric point is 5.93. It is soluble in water, dilute alcohols, liquid ammonia, and methyl formamide, but insoluble in alcohols, ethers, and acetone.
2.Function
Glutathione is a tripeptide composed of glutamic acid, cystine and glycine. It is the coenzyme of glyceruronic dehydrogenase and the coenzyme of glyoxalase and phospho-malose dehydrogenase. Glutathione can activate a variety of enzymes, such as thiol (-sh) enzymes and coenzymes in vivo, so as to promote the metabolism of carbohydrate, fat and protein, and also affect the metabolic process of cells. It is an important regulatory metabolite in cells.
